a good, old fashioned lasagna with a Bolognese supplemented with hot Italian sausages. Using the most delicious, fresh ricotta and mozzarella in the world too.

Early dinner - Strip Steak and Baked Potato, Chocolate Delight Cake(a hazelnut cake topped with a chocolate mousse and covered with Ganache). Later a bottle Veuve Clicqout and a selection of cheeses(Delice de Bourgogne, Piave, Langres), Cranberry-Walnut bread, and various dried fruits.

New Year's Day (not Eve) is the time for a festive dinner in our house.

Tonight we are having Vichyssoise as a first course, followed by filet mignon with a King Trumpet mushroom, shallot and brandy reduction sauce, steamed white asparagus, and creamed spinach. We will be drinking a Rosso di Montalcino with it, although I am contemplating opening the Brunello di M as well.

For dessert we are going to have marzipan in dark chocolate from Niedegger in Lubeck that Santa brought me ("hey Santa! How did you know I was there this year?! :P ), followed by a new bottle of grappa that I haven't tried yet.

I got up at 5 this morning and it was snowing like mad and hasn't let up since. Since we have been trapped in the house all day, I've been in the kitchen a lot. Tonight's dinner...tomato jam and goat cheese tarts and steak salads. Vanilla layer cake with chocolate frosting for dessert.

My wife made a Provencal stew of pork loin stewed with fennel bulb, tomato and herbes de Provence, appropriately enough! We had some steamed baby pototoes with it.

Holy shit, was this a good dish!!! And the on-line comments say it gets better the next day or two after sitting. I am sure it will!

we made a perfectly grilled strip steak last night with a blueberry and balsamic sauce. Perfection. Also had a crispy baked potato and a pile of broccoli. We drank a Gnarly Head Old Vines Zinfandel. Nice and fruity, but a bit too much oak for my taste.

still, a good steak house-style dinner is good once in a while!

done.

4 Tb olive oil
1 stalk celery, diced
1 carrot, peeled and diced
1 large yellow onion, peeled and diced
1 Tb minced fresh garlic
1 full teaspoon red pepper flakes
3 oz. prosciutto, chopped (about 1/2 cup)
1 tsp. kosher salt
8 oz. dried brown lentils (1 heaping cup)
1 lb. spaghettini
3-4 Tb butter
Emmenthaler or Appenzeller cheese for grating

1. heat the oil in a stock pot and add the celery, carrot, onions, garlic, red pepper, prosciutto and salt. Saute gently until veggies are soft, about 15 minutes.
2. Add the lentils and 5 cups water (or half water and half chicken stock), bring to a boil, then simmer gently until the lentils are soft but not falling apart, about 20 minutes.
3. In another pan, boil salted water and cook the pasta until it's still quite firm, about 4-5 minutes. Drain it in a colander then add it to the pan with the lentil sauce. Toss it in the sauce over heat for 2 minutes until it is al dente. Stir the butter through the mixture until melted.
4. Serve in heated bowls and top with the grated cheese.

It's a good recipe. You get a good protein from the lentils, and the nuttiness of the Swiss cheeses goes perfectly with the taste of the lentils and prosciutto.

tonight we are roasting a chicken with oranges and rosemary with hazelnut spaetzle and pear/parsnip puree. This calls for a good white wine.
